Tonight I’m going to ladies night–an Irish potluck for St.Patrick’s Day! So far we have Shepherd’s pie, Irish stew, Irish soda bread, a couple salads, bailey brownies, and Irish potato candy. Corned beef and cabbage? No, thanks. So this idea came to me…make a green and gold fruit salad! So voilà, the resulting recipe…
St.Patrick’s Green & Gold Fruit Salad
1 granny smith apple
1 golden delicious apple
2 fresh pears
2 medium bunches of green grapes
1 to 2 medium bananas
2 kiwis
2 cups honeydew melon
2 tablespoons lemon juice
dash of cinnamon
Optional additions:
green or yellow star fruit pistachio nuts mini marshmallows (green if possible, or the ones from Lucky Charms cereal) yogurt, fruit dip, whip cream, honey, or agave nectar
Directions
Chop all fruit (except grapes) into small bite-size pieces and place all fruit in a large mixing bowl. Drizzle on lemon juice and mix well. The lemon juice should keep the fruit from turning brown and also gives the fruit a little zest. Add a little more than the 2 tablespoons if necessary. Add any optional ingredients you wish. Sprinkle cinnamon on top. Transfer to a green serving dish if you wish.
You don’t need to have all these fruits to make this simple recipe. Just use as many as you can find. I didn’t even have them all, but I thought how fun it would be if I did!
