While still waiting for most of my veggies to mature in the garden, I had an abundance of lettuce, green peas, kale, and strawberries. So I decided to throw them all in a smoothie! Just kidding. Only two out of four. This new recipe is similar to my Green Power Smoothie, but this flavor is not quite as sweet.
Ingredients: 2 medium stalks of kale (or one large one) 6 small strawberries (or 3 large ones diced) 3 frozen strawberries 2 heaping spoonfuls of Greek yogurt 1 heaping spoonful of peanut butter or almond butter 1 tablespoon ground flaxseed milk of your choice (whole, skim, rice, coconut, almond, etc.)
1) remove leaves from center stems of kale. discard the stems. use only the leaves, torn in smaller pieces.
2) put ingredients into smoothie cup (Magic Bullet or my new favorite–>Vitamix!)
3) for the milk, fill up to half the height of the other ingredients
4) blend until smooth
5) enjoy they healthy yumminess! 🙂
