While still waiting for most of my veggies to mature in the garden, I had an abundance of lettuce, green peas, kale, and strawberries. So I decided to throw them all in a smoothie! Just kidding. Only two out of four. This new recipe is similar to my Green Power Smoothie, but this flavor is not quite as sweet.
Ingredients:
2 medium stalks of kale (or one large one)
6 small strawberries (or 3 large ones diced)
3 frozen strawberries
2 heaping spoonfuls of Greek yogurt
1 heaping spoonful of peanut butter or almond butter
1 tablespoon ground flaxseed
milk of your choice (whole, skim, rice, coconut, almond, etc.)
Directions:
1) remove leaves from center stems of kale. discard the stems. use only the leaves, torn in smaller pieces.
2) put ingredients into smoothie cup (Magic Bullet or my new favorite–>Vitamix!)
3) for the milk, fill up to half the height of the other ingredients
4) blend until smooth
5) enjoy they healthy yumminess! 🙂
